1 stick melted butter
1 serving AYO Vanilla Yogurt
2 mashed overripe bananas
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/2 teaspoon each cinnamon and salt
1/4 teaspoon each baking soda and ground ginger
3/4 cup brown sugar
3/4 cup chocolate chips
- Mix dry ingredients in a bowl.
- Mix wet ingredients in a separate bowl.
- Combine wet & dry: Pour the wet mixture into the dry mixture and mix until just combined. Fold in chocolate chips. Don’t overmix, overmixing the batter tends to make the muffins less tender.
- Fill each muffin lined hole with batter. For uniformity, fill muffin tin using a ¼ measuring cup or large ice cream scooper to scoop up the batter and pour into the muffin holes. Bake at 350 degrees F until golden, and a toothpick inserted into the centers comes out clean, 20 to 25 minutes. Let cool a few minutes and enjoy warm or at room temperature.
