Banana, Chocolate


1 stick melted butter
1 serving AYO Vanilla Yogurt
2 mashed overripe bananas
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/2 teaspoon each cinnamon and salt
1/4 teaspoon each baking soda and ground ginger
3/4 cup brown sugar
3/4 cup chocolate chips



  1. Mix dry ingredients in a bowl.
  2. Mix wet ingredients in a separate bowl.
  3. Combine wet & dry: Pour the wet mixture into the dry mixture and mix until just combined. Fold in chocolate chips. Don’t overmix, overmixing the batter tends to make the muffins less tender.
  4. Fill each muffin lined hole with batter. For uniformity, fill muffin tin using a ¼ measuring cup or large ice cream scooper to scoop up the batter and pour into the muffin holes. Bake at 350 degrees F until golden, and a toothpick inserted into the centers comes out clean, 20 to 25 minutes. Let cool a few minutes and enjoy warm or at room temperature.
